you should observe his style of playing first; then after a few hands you would know how he plays...

Its really hard to recognise if someone holds a set especially if u feel a player is kinda fish but if a strong player bets or raises too much after the flop with a strange flop like 2 5 9 then its a sign of holding a set.But i strongly feel its very hard to recognise a set and needs some extraordinary skills for that.
