That's strange she didn't showed up, was curious myself too. If she took a money offer, it's her right, but don't get it then, if I would have the chance on a holyday like that, even when I don't cash I wouldn't mind, just the experience of being there is already great, and for most of us it would be once in a lifetime. Off course I"d like some cash, but wouldn't be too angry if I didn't.
AFAIK Party Poker does not allow to take cash instead of the package. Maybe she bought into some other event or even in two-three with smaller buy-ins. If package terms allow it...

well, when i look at my roll which is smaler than 50$ right now and win that seat i would also make a deal and take let´s say 7.000$. That´s a lot of money for a poor student Even though you may never play there again.... How big is the chance to cash, you know? Even a solid player will get really much problems!

After winning the satellite she introduced herself to the forum (see corresponding thread). So, that's the name I was looking for on the list. And admin knows her real name even If she inroduced herself with a false name.
