The moment sites restrict players to playing only 1 table is the moment I quit poker.

If so, and if that majority believe that MT is profitable for them all in particular, then it simply doesn't add up. The majority of all players, MT or not, lose money. Besides, it is pretty exciting to go way up in limits than multitabling.

I'm sorry but this is the worst stupidity written in words that I've read in a while.
Multitabling = losing money faster? lmao.
You are right for a losing player,however losing players are usually casual players who also dont care about getting huge volume in. Thus,fishes single-table alot of the time.
Profitable players should always play as many tables as they can while maintaining their A-Game.
For some people (like me) who play 25-30 tables most of the time,single tabling would even be -EV because in my case I'd just get bored sitting there and have one decision per minute or something,which then is folding most of the time.
By 1 tabling I would also have a much lower hourly rate than I have right now.
The most simple way way to show this is by comparing SNG players' tableing abilities.
Lets say someone plays $10 SNGs,12 tables and is a 10% ROI player.
He will make $12 per SNG-set that he plays.
Now lets say he increases his number of tables to 20.
His abilities might drop a bit because of the less time for decisions,lets say his ROI drops to 7% because of the bigger number of tables.
He will still make more money that way ($14 per set compared to $12).
So why in hell should he play less tables than what would be optimal for his winrate?
Yes I know this thread is about cashgames,the same concept can be applied for cashgame players as well tho,just easier to explain for SNGs

I find that multitabling helps to remove variance from my poker game (not completely!). Normally 1/3 of my tables will be nicely profitable, 1/3 will be slightly profitable, and 1/3 will be even steven or leaking chips a bit. If I only play one or two tables, and they happen to fall into the not very profitable category, I will have a losing session. Multitabling however gives me a much bigger chance to find the tables where I will connect solidly and stack my opponents, and come out of my session ahead. Seeking out soft tables is also vitally important...
